A simple apple crisp recipe that’s as healthy as it is delicious!
Happy weekend my friends!
It’s time again for another instalment of our cozy living series. Not only am I sharing my own ideas to bring a little more cozy to our lives, but I’m also teaming up with an amazing group of blogging friends to bring you even more cozy inspiration, so be sure to check out their cozy living ideas at the end of this post.
I’ve been looking out my window at big, fluffy snowflakes falling from the sky all day now and I have to say, it’s sure giving me all the cozy (dare I say Christmas) feels.
There’s just something about seeing our little corner of the world covered in a beautiful blanket of fresh, white snow that always takes my breathe away just a little. Honestly, you’d think it would get old as it becomes our normal through so much of the year, but even as our Winter drags on into Spring, I can’t deny how breathtakingly beautiful things looked all draped in white. (And you thought I just loved white for decorating!)
Now I don’t know about you, but there’s nothing I love to do more on a cold, snowy day than spending some time baking away in the kitchen. I mean really, is there anything cozier!
And so, that’s just what I did.
I love that this recipe is so quick + easy to make that I can whip it up for desert after a long day of work, or pop it into the oven for a special breakfast on the weekend. And even better, it’s so healthy + delicious, you can enjoy it guilt free!
Healthy Apple Crisp
Ingredients
Apple Filling
- 3 large Granny Smith apples (chopped)
- 2 tbsp almond flour
- 1 tsp cinnamon
Topping
- 3/4 cup coconut oil (melted)
- 1/2 cup honey
- 1 1/2 cup rolled oats
- 1/2 cup chopped pecans
- 1/2 cup almond flour
- 1 tsp all spice
- 1/2 tsp salt
Instructions
-
Preheat the oven to 350 degrees. Grease a 9×13 baking dish. Toss the apples with the almond flour and cinnamon and spread across the bottom of the baking dish.
-
Whisk the coconut oil and honey together until smooth. In a large bowl, combine the rolled oats, pecans, almond flour, all spice, and salt. Add the coconut oil and honey mixture and stir until combined.
-
Pour the oat mixture over the apples to cover them evenly. Bake for 45 minutes until the topping is browning slightly. Let stand for 15-20 minutes to thicken before serving.
