Sharing the best zucchini bread recipe EVER!

Hello friends, it’s time again for another instalment of our cozy living series, hosted by my friend Jennifer at Town & Country Living. I always look forward to seeing the cozy inspiration that everyone has to share each month!
I don’t know what the weather’s been like in your neck of the woods, but here in Northern Alberta, temperatures are dropping just as quickly as the leaves have and Winter is very quickly creeping it’s way in. All this cold weather has had me craving all the cozy lately. Plaid pillows, chunky knit blankets, and flickering candles always help to make our home feel so warm + cozy.


And my favourite way to cozy up on a cold and dreary day (well, besides knitting in front of a fire maybe), is baking away in the kitchen, with some lovely music playing and a warm coffee in hand.

Our zucchini game was strong in this year’s garden harvest, which is great because it just so happens to be one of my favourite vegetables to cook with. Not only is it easy to shred up and throw into pasta sauces and casseroles, but we love to use our spiralizer to create zucchini noodles (or zoodles as we’ve come to call them). But my very favourite way to put our zucchini to work is baking it into a yummy sweet bread. So today, for this month’s cozy living post, I thought I’d share our favourite zucchini bread recipe…

Now, I love to bake my sweet breads in a square pan (find mine here) rather than the traditional loaf pan for more even baking, which helps keep it from drying out. And I always sprinkle my sweet breads with a bit of sugar before baking to help the top crisp up just a touch.











The Very Best Zucchini Bread Recipe
Ingredients
- 3/4 cup brown sugar
- 2 tbsp milk
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp allspice (or cinnamon)
- 1 3/4 cups flour
- 2 cups shredded zucchini (firmly packed)
- 3/4 cup chopped walnuts (toasted)
- 3/4 cup raisins (or chocolate chips if you prefer)
- 2 tbsp sugar (to sprinkle on top)
Instructions

Preheat the oven to 350°F. Lightly grease a 9' square baking pan (or a loaf pan if you prefer).

In a medium-sized bowl, beat together the brown sugar, milk, vegetable oil, eggs, and vanilla until smooth.

Whisk the baking powder, baking soda, salt, and cinnamon into the flour. Then, add the dry ingredients to the liquid ingredients in the bowl, stirring until combined.

Stir in the zucchini, walnuts, and raisins or chocolate chips.

Pour the batter into the prepared pan and sprinkle with sugar.

Bake the bread for 55 to 65 minutes, until a toothpick inserted into the centre comes out clean.

Yep this is one of my favorite bread recipes for sure. I have one of the gadgets too for making zoodles, what a great invention. I’ll have to try bread in a square pan sometimes I just always use a loaf pan. Great idea!
Thanks Dawn! I’d always used a loaf pan too until I tried the banana bread recipe in Joanna Gaines’ cookbook, which recommend the square pan and now I don’t think I’ll ever go back. Hope you love it as much as we do!
zucchini is my favorite. i have never cooked it outside or a loaf pan though. Okay whats a zoodle 🙂
I love using a spiralizer to turn the zucchini into noodles (zoodles) – it’s a delicious alternative to or addition to pasta!
