As you can see by the pile of giant green leaves and vines taking over the far side of our garden, it’s officially zucchini season around here! Normally my go-to for cooking up zucchini would be to roast a batch in the oven with a bit of olive oil & seasoning sprinkled on top, but through August we tend to find ourselves with far more zucchini than we know what to do with, which leaves anyone with a garden looking for all the ways to put our abundance of zucchini to work.
I’ve spent many an evening over the past week collecting all sorts of zucchini recipes to try and, while I’ve found a ton of recipes I can’t wait to whip up for dinner (I’m thinking I might need to share a round up of those with you soon too!), the truth is, there’s only so many meals we can enjoy using the same ingredient before we grow too tired of it. Finding ways to make zucchini taste a little different at dinner each night can be a bit of a challenge, which is why baking with zucchini has become my secret weapon. Putting zucchini to work in a delicious dessert is such an easy way to use up some zucchini in a new, creative and tasty way and let’s face it, it’s much harder to grow tired of yummy baked treats!
