There’s really nothing I’d rather do more on a cold, crisp Winter’s morning than stay huddled under a big old pile of warm + cozy blankets all morning long.
Long, lazy mornings in bed (or sometimes curled up on the sofa) have sort of become our M.O. this Winter.
It’s no secret weekends were made for sleeping in (or sipping a coffee all to yourself while the rest of your family sleeps in).
And really, who wants to brave the cold, whether it’s just crawling out of your cozy nest of a bed or even worse, wandering outside the house.
Okay, that’s not exactly true I guess. I mean we do love a good morning ski (x-country or downhill) and even a walk in the fresh morning air can be one of the most lovely ways to start the day. But if I’m being really honest, my very favourite kind of morning is a cozy morning in bed with the whole fam-jam snuggled up together – a big old pile of books beside us and a yummy breakfast to nibble on between chapters.
So today, I can’t wait to share one my very favourite, go-to breakfast in bed recipes.
Baked Eggs with Mushrooms + Brie
Not only is this baked egg dish amazingly yummy (hello brie!), but it’s so darn simple to whip up!
These baked eggs might sound fancy (and they taste pretty fancy too I might add), but with just a bit of chopping + sauteing and then a quick finish in the oven, this gourmet breakfast in bed couldn’t be easier!
Serve it up with a bit of toast and nice hot cup of coffee (or oj if you prefer) on a big old tray (I love this one from Vintage Farmhouse Finds!) and you’ve got the makings of a pretty cozy morning indeed!
It’s simple to eat in bed (no crumbs) and tastes so darn yummy!

Baked Eggs with Mushrooms + Brie
Ingredients
- 2 tbsp butter
- 1/2 cup onion (coarsely chopped)
- 1 cup mushrooms (coarsely chopped)
- 2 cloves garlic (finely chopped)
- 1 tsp dried tarragon
- 1 pinch salt
- 1 pinch pepper
- 1/3 cup heavy cream
- 4 (or more) thick slices brie
- 4 eggs
Instructions

Preheat oven to 350F

Add the butter to a medium skillet over medium heat; once the butter is melted, add the onions and mushrooms. Cook until softened, but not browned, about 6 to 8 minutes. Add the garlic and tarragon and season with salt and pepper. Cook 2-3 minutes more, stirring constantly. Remove from heat and stir in the cream.

Pour the mixture into 4 individual-sized oven-safe gratin dishes and layer the sliced cheese on top (add as much as you'd like!). Make a well in the center of each dish, cracking an egg into each one.

Bake until the cheese is melted and the eggs are cooked just how you like them (I like mine with set whites and runny yolks, which takes about 10 minutes). Then dig in!
Whether you’re enjoying it curled up in a nest of blankets and pillows or whipping up brunch for 20, I just know y’all will love these baked eggs as much as we do!
