Make your mornings a little easier and a lot yummier with these simple, healthy and delicious overnight oats!
It’s no secret that mornings around here are a bit hurried complete and utter chaos more days than not. Because breakfast is usually the last thing we do before leaving the house, it tends to be the first thing to be cut when we’re running late. Obviously, I make a point to feed the kid, even if it’s just pb&j in the car on the way to the babysitter, school, the gym, or wherever it is that we’re off to that day.
But lately, I’ve been making more of an effort to make sure that a healthy breakfast for us all (Mommy included) is no longer an after thought.
I’ve started keeping a few of these yummy breakfast oatmeal muffins on hand for those mornings that I just can’t seem to get it together – they’re so easy to whip up and make for the perfect breakfast on the go!
And for the mornings that we actually have a few minutes to sit at the table and enjoy some bites together, we’ve been munching on this delicious overnight oatmeal. Not only is it seriously yummy and filled with all sorts of good stuff, but it’s a quick, make-ahead breakfast that’s ready to eat whenever we are.
There are SO many different ways to dress up the oatmeal, but the base recipe always remains the same:
Ingredients
1/2 cup rolled oats
1 tsp chia seeds
1 tsp ground flax
1 tsp hemp hearts
1 tbsp brown sugar
1/2 cup unsweetened vanilla almond milk
Method
Layer all ingredients into a medium sized mason jar. Place in the fridge to settle overnight. Mix when ready to eat.
Optional: Warm in the microwave for one minute before eating.
Dress it up:
Top with fresh fruit, nuts, dried fruit, coconut or however else you might enjoy your oatmeal.
