One of our fave go-to breakfasts (when we’re not grabbing some yummy oatmeal on the go) is a bit a ton of granola sprinkled over some yummy greek yogurt and fruit. It’s quick, healthy and super tasty – what’s not to love?
Granola lovers that we are, we’re always on the hunt for the very best – we love to try out new mixes we come across, though too often, we find ourselves more than a little disappointed with the high price tag, not to mention the bland taste.
You’d think, after all of these years of snacking on mediocre granola, I’d have tried my hand at making my own … I mean really, why do these seemingly obvious DIY’s seem to pop into my head so rarely?
I’ll tell ya, now that I’ve finally tried my hand at making our own homemade granola, I’ll never go back to store-bought again!
INGREDIENTS
3 cups of rolled oats
1 cup of chopped almonds or walnuts
1 cup of cashews
1 cup of unsweetened coconut
1/4 cup of dark brown sugar
1/4 cup of maple syrup
1/4 cup of melted coconut oil
1/2 tsp. salt
1 cup of raisins (or any sort of dried fruit)
METHOD
one: Preheat oven to 250 degrees F.
two: In a large bowl, combine the oats, nuts, coconut and brown sugar.
three: In a separate bowl, combine the syrup, coconut oil and salt.
four: Add the liquids to the oat mixture, stirring until everything is well combined.
five: Cook for 1 hour 20 minutes, stirring it all up every 20 minutes or so until everything is toast to a golden brown colour. Remove from the oven and let cool.
six: Once the mixture has cooled down to room temperature, mix in the raisins or other dried fruit (I used apples this time around). Store in an airtight container.
If only I’d know how easy making our own homemade granola could be! Not only does this stuff taste so much better than anything I could buy, but it’s so much less expensive!
