Nut Free Granola Recipe

Ingredients

  • 2 1/2 cups coconut
  • 2 cups rolled oats
  • 1 cup pumpkin seeds
  • 1/2 cup hemp hearts
  • 2 tbsp coconut sugar (or sugar of choice)
  • 2 tsp cinnamon
  • 1 tsp sea salt
  • 1/3 cup coconut oil (melted)
  • 1/3 cup maple syrup (or honey)
  • 2 tbsp sunflower seed butter (or nut butter of choice)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 300ºF. Line a baking sheet with parchment paper or non-stick silicone liner.

  2. In a large bowl, combine the dry ingredients - coconut, oats, pumpkin seeds, hemp hearts, sunflower seeds, sugar, cinnamon, and salt

  3. Melt coconut oil in a small saucepan over low heat, then stir in the maple syrup, sunflower seed butter and vanilla. 

  4. Pour the oil mixture over the dry ingredients and stir until fully combined.

  5. Spread granola mixture in an even layer over the prepared baking sheet and bake for 25-30 minutes, stirring halfway.

  6. Once cool, store in an airtight container for up to one month or freeze for up to 2-3 months.
